Sugar Free Morning Waffles

I make these waffles at least once a week, if not more. They are a favorite with my children, we often top with a ton of butter and a splash of maple, when I’m really wanting to be aware of my blood sugar (rarely care these days) I top with almond butter in stead of maple. I personally am not a super sweet needing person, I more go for the bread. So these smothered in butter or almond butter are delightful to me! The best thing about this recipe is you just put all the ingredients in the blender! SO easy to clean up! You’re welcome!

FIBER FILLED BREAKFAST

This recipe features flax, chia and psyllium husk for extra fiber. They help control bloating and also load you up on healthy fats. They are sweet from the monk fruit and the punch of vanilla makes your entire kitchen smell like Disney Land!

INGREDIENTS

2 eggs

1 cup cassava flour

1 tablespoon flax seed

1 tablespoon chia seed

1 tablespoon psyllium husk

1 tablespoon vanilla extract

1 teaspoon pink salt

3/4 teaspoon baking soda

1/3 cup monk fruit

1 1/8 cup milk of choice

METHOD

  1. Preheat waffle maker based on instructions.

  2. Crack eggs into the blender then layer all the ingredients in as listed, cover with milk and blend until smooth.

  3. Pour 1/3 cup batter into the waffle maker, you may need a spatula to spread as the batter can thicken quickly.

  4. cook four approximately 3 minutes or until golden brown

  5. Enjoy with whatever toppings please you most! They keep well in the fridge or freezer for later consumption.
