Pancakes You’ll Feel Good About

I make these for breakfast, for lunch, and sometimes for dinner. They are clean and delicious and the entire family loves them. Easy to make! I use a blender so there isn’t a huge mess to clean up.

NUTRITION SPOTLIGHT

Just like my waffles recipe, this recipe also features flax, chia, and psyllium husk for extra fiber. They help control bloating and also load you up on healthy fats.

INGREDIENTS

1 huge banana

1/2 cup cassava flour

1/2 tea baking soda

1/4 cup tapioca flour

2 eggs

1 tablespoon flax, chia, psyllium husk

1 tablespoon vanilla extract

1 tea pink salt

3/4 cup milk of choice

METHOD

  1. Preheat skillet

  2. Crack eggs into the blender then layer all the ingredients in as listed, cover with milk and blend until smooth.

  3. Pour 1/4 - 1/3 cup mix into your preheated and buttered or oiled skillet

  4. cook for approximately 3 minutes or until golden brown

  5. Enjoy with whatever toppings please you most! They keep well in the fridge or freezer for later consumption.
